The Sushi Chef is responsible for preparing high-quality sushi and sashimi dishes to meet the standards of excellence expected by our guests. You will collaborate closely with the kitchen team to uphold Modan’s standards of excellence and deliver an exceptional dining experience to our guests.

ESSENTIAL JOB FUNCTIONS:

  1. Sushi and Sashimi Preparation:
    • Prepare sushi and sashimi dishes according to established recipes and plating standards.
    • Handle and portion seafood, including slicing, filleting, and cutting fish for sushi and sashimi.
  2. Seafood Quality and Storage:
    • Ensure the freshness, quality, and proper storage of all seafood and ingredients used in sushi preparation.
    • Follow recipes and plating guidelines to ensure consistency and accuracy in sushi preparation.
  3. Station Cleanliness and Organization:
    • Maintain cleanliness and organization of the sushi station, including equipment, tools, and work surfaces.
    • Follow all food safety and sanitation protocols, including proper handling and storage of ingredients.
  4. Inventory and Stock Management:
    • Ensure all products and prepared items are properly labeled, dated, initialled, covered, and rotated following FIFO (first in, first out) principles.

  • Guest Interaction:
  • Answer the phone promptly and professionally.
  • Greet the guests at the door with a smile and follow farewell procedures.
  • Open the door for arriving and departing guests.
  • Escort guests to tables and assist in seating them.
  • Reservations Management:
  • Use Resy/Open Table effectively and accurately.
  • Input data accurately and manage reservations to optimize seating and guest flow.
  • Confirm reservations and process special requests.
  • Note all pertinent guest information on Resy/Open Table.
